May 24, 2002, Newsletter Issue #91: Douse the Fire with Dairy

Tip of the Week

By the way, have you ever bitten into a hot pepper and then tried to put out the tongue flames with water or a soda, only to discover this is NOT the answer? Here`s help: Next time, try a sip of milk or a few bites of a dairy product like yogurt or cheese. A sip of an alcoholic drink will also douse the fire in your mouth. This works because of a certain protein (casein) in dairy and alcohol that neutralizes the enzyme released by the pepper.
